Meatloaf makes fabulous leftovers!!
For each sandwich:
2 slices bread
sliced meatloaf
1 T mayonnaise or butter
1 t ketchup
¼ t mustard
1 slice Jack or provolone cheese (optional)
additional butter for hot or grilled sandwich
Cold:
Spread each slice of bread with mayonnaise or butter*. Spread ketchup and mustard on one slice. Slice cold meatloaf and place on ketchup and mustard. Top with cheese if desired. Top with remaining slice of bread.
Hot:
Spread each slice of bread with mayonnaise or butter*. Spread ketchup and mustard on one slice. Brown sliced meatloaf on both sides in butter in skillet over medium heat. Top with cheese. Place on ketchup and mustard. Top with remaining slice of bread.
Grilled:
Spread each slice of bread with mayonnaise or butter*. Spread ketchup and mustard on one slice. Brown sliced meatloaf on both sides in butter in skillet over medium heat. Top with cheese. Place on ketchup and mustard. Top with remaining slice of bread. Toast entire sandwich again (both sides) in melted butter in skillet until golden brown.
*I like mayonnaise on the cold sandwich and butter on the hot or grilled.
