My husband gave these a 10. A perfect 10. Not a 10 as in “beautiful” but a wow-oh-my-good-heavens-how-did-you-make-these-they-are-so-good 10. I mean bacon. Fried? Twice?!?! I do believe we need a national holiday to celebrate that! And you could serve these mini bacon taquitos to celebrate. Ha! They also contain chicken and cream cheese but the bacon is what makes them a 10, so it gets honorable mention in the recipe title. Make them. You’ll love them. You’ll wonder how you lived without them.
6 slices bacon, chopped
4 oz. cream cheese, softened
2 12.5-oz. cans white chunk chicken, drained
8 10-inch flour tortillas
vegetable oil
Cook bacon in skillet over medium heat until crisp. Drain on paper towel. Combine bacon, chicken and cream cheese in bowl and stir until combined. Set aside. Cut three circles out of each tortilla using 3-inch round biscuit or cookie cutter. Place 2 teaspoons bacon mixture down center of each tortilla round and roll up, securing with toothpick. Heat 3 inches of oil in saucepan over medium heat. Cook taquitos until golden, 6-8 minutes. Drain on paper towel. Remove toothpicks and serve warm.
