1 strawberry cake mix
1/4 c flour
1/2 c oil
2 eggs
Whisk dry cake mix and flour. Add oil and eggs. Mix with fork just until incorporated. Scoop using ½-inch or 1-inch cookie scoop. Roll into balls. Place on cookie sheet and bake at 375ºF for 6-7 minutes for ½-inch cookies or 8-9 minutes for 1-inch cookies. Cookies should just start to crack on top. Cool for 5 minutes and move to wire cooling racks. Meanwhile, mix frosting:
8 oz. cream cheese, room temperature
½ c butter, room temperature
dash salt
3 c powdered sugar
1 t vanilla
Beat cream cheese and butter until smooth. Add salt. Gradually beat in powdered sugar. Add vanilla and beat until smooth. Spread frosting on flat side of half of cookies and top with remaining cookies.
