I love to cook, but what do you think it says about me if I cook in my dreams? Seriously, last night I dreamed I was making homemade tapioca pudding for Dolly Parton. She was so nice and patient, waiting for me to finish the pudding so she could have some. I wonder in real life if she even likes tapioca pudding. Well, it must be a sign that I love to cook if I’m dreaming about it. Here’s my newest inductee into the “chocolates” recipe hall of fame. Chocolates filled with sugar cookies, topped with sprinkles. If that won’t bring a smile to your face, I’m not sure what will. They are fantastic!! If you need a good sugar cookie recipe, try white velvet sugar cookies or traditional sugar cookies.
12 medium unfrosted sugar cookies, cooked a few extra minutes until crispy/golden*
1 c cold buttercream frosting
2 c white chocolate chips
2 T shortening
sprinkles, optional
Crumb cooled cookies using food processor, chopper, or blender. Stir in frosting. Using ¾-inch scoop, form balls and place on wax paper. Freeze for 1 hour. Melt white chocolate chips and shortening in mini crock pot or double boiler. Stir until smooth. Remove balls from freezer and dip in chocolate. Place on fresh sheet of wax paper. Top immediately with sprinkles, if desired. Let set. Store in refrigerator.
*or bake “scraps” of sugar cookie dough (the leftover dough after cookies have been cut out)
